			<content:encoded><![CDATA[<p>I&#8217;ve been photographing so much food that I decided to make a whole new category for it.  I really thought photgraphing my food would be just as exciting as writing about my bike rides, but it&#8217;s been getting a pretty good response!  So hey, I&#8217;m gonna keep it coming!</p>

Making sack lunches has been hard for me.  I haven&#8217;t packed a lunch for myself in almost a decade.  My cooking style doesn&#8217;t do leftovers well, at least not ones that are simple to transport.  I&#8217;ve been trying to make my lunches tempting enough that I am not swayed to go buy fast food.  This sandwhich is made with Peg&#8217;s tender Thanksgiving Turkey leftovers and sports flourless (all sprouted grains) bread from Dave&#8217;s Killer Bread and sprouts I grew myself.</p>

&#8220;mom&#8217;s leftover vegetable&#8221; stew.  This is, in my opinion, the best food photo I&#8217;ve taken thus far.  My photos will be much improved once I get a new camera with a better macro.</p>

There is something to be said to be spending a leisurely weekend at the central Oregon coast with good company.  Being timed perfectly for Christmas (and hence the biggest winter storm of the century) the weather was rainy the whole weekend long.  The strong gusty winds shook the window panes and rattled our beds at night.  But, the ocean was still perfect.  The lapping waves were still the perfect lullaby for calm.  If one ever needs to feel grounded and down to earth, I recommend getting some awesome friends who invite you to share the coast with them!</p>

Christmas Eve Eve, December 23rd, is a very special day, seeing as I am Amanda Eve.  I feel so lucky to be in the Portland area during the biggest snowstorm it&#8217;s seen in at least 50 years.  I haven&#8217;t seen a Portland winter in 7 years, what were the chances that the first Portland winter I&#8217;d experience in so long would be so wonderful?  I wonder, as we begin to see a climatic shift to more extreme weather across the board, will Portland see more severe winters than it has?  For whatever reason, I really do delight in winter.  The quiet.  The bright white.  The bitterness contrasted with brightness.  I thought I got quite a treat to be here during one of the most dramatic, long lasting, and colorful autumn&#8217;s that anyone&#8217;s seen in years.  But to see this, I am truly a very, very lucky girl!<br />

It&#8217;s hard to be happy in this world, but I found that the more I surround myself with happiness, the easier it is for me to feel that way. 			<content:encoded><![CDATA[<p>It seems lately I&#8217;ve been talking to a lot of people who are deeply stressed by debt, not having money, filing for bankruptcy, living paycheck to paycheck and so on.  Maybe it&#8217;s because I moved to a city founded on consuming, but that&#8217;s another story.  At any rate, I watched a movie that I found particularly poignant.  <a href="http://www.imdb.com/title/tt0762117/">Maxed Out</a> accurately predicted the future of American debt in 2006, just as some of it&#8217;s references did from the 30&#8217;s.  Everyone playing the cards here knows what is going on.  And yet it continues.  I thought about if the documentary would have been different if it were produced after the recent government bailout.  It doesn&#8217;t need to be different.  This movie accurately points the finger, and I think is a must see for those in debt.  It&#8217;s not entirely your fault.  For everybody not currently in debt, it makes you want to use cash only, have accounts with no financial institutions whatsoever, and, perhaps leave the country.  At any rate, it is a must see.<br />
For those who are concerned about America&#8217;s, and American&#8217;s financial future, I encourage you to visit <a href="http://www.affil.org/">Americans for Fairness in Lending</a>.  If you are not convinced that is a worthy click, watch the movie and you will!</p>
